Pass the olives: Stir Martini + Raw Bar to open soon

The soon-to-be opened Stir Martini + Raw Bar,  located on the lobby floor of the Hyatt Regency Bellevue, is a modern take on the classic Northwest meeting spot. 

A deep purple ambiance draws attention to the new lounge space created by Matt Bomberger, the current owner of O/8 Seafood Grill and Twisted Cork Wine Bar. His new creation is polar opposite to the classic jazz feel of the Twisted Cork, instead, Stir Martini + Raw Bar offers a swanky space with comfortable seating and small plates featuring a specialty raw food menu. 

“I wanted this place to have a deconstructive feel but with a modern twist,” Bomberger said. “The space is meant to be reminiscent of the Northwest, with the wood accents and overall curvature of the seating that begins shallow from the exterior and moves upward as it draws near the center bar. It gives the illusion of a mountain reaching its peak.” 

Carrying over the deconstructive theme, Stir Martini + Raw Bar will include a Cober Head Vodka tap which will pour chilled Vodka for a unique take on the traditional martini. The drink menu will include a Deconstructive Martini, serving the vodka in a glass paired with a glass of olives or cucumber slices among other options. 

We wanted to create a drink menu that would offer specialty cocktails with a little edge,” Bomberger explained. 

Stir Martini + Raw Bar will have the capacity to seat 184 and includes a separate space for private parties of up to 60 people. An outdoor dining area is surrounded by green gardens and an indoor patio overlooks the new grand staircase and expanded lobby area of the Olympic Tower at the Hyatt Regency Bellevue.

Stir Martini + Raw Bar is set to officially open in early August. It is located at 900 Bellevue Way N.E. just off the Wintergarden of Bellevue Place.
